Diet Series: The Plateau

Notes from the interviews of the Origins Summit
This is not a transcript but cliff notes of the answers from the interviews. The speakers are doctors, nutritionists and specialists in their field of health that practice functional medicine. Endocrine disruptors BPA destroy your liver. Three of the worst sources are cash register receipts, canned foods and the large plastic lids for hot drinks (the tall one’s not the flat one’s). Disrupting the estrogen receptor, thyroid receptor, DHEA and the androgen receptor for testosterone causing man boobs and fatty liver. Study on non-alcoholic fatty liver found in 50% of people in Texas and 30% nationwide.
When BPA enters by food or skin it binds to the estrogen receptor locks on and doesn’t let go leading to man boobs and in women larger hips and thighs. It is also causing infertility and polycystic ovarian syndrome. High levels of phthalate’s in women are causing more miscarriages, worst egg quality and worst outcome with in vitro fertilization. She referred to a Harvard Study on this.

90% of chronic disease today is caused by exposure to external chemicals, radiation and heavy metals both ingested and absorbed.
Big chemistry is the big tobacco of yesterday.
Most BPA free is also bad.
Glass and stainless steel ok, no Teflon and no microwaves because heating plastic in a microwave leaches BPA into your food.

Comprehensive metabolic panel is used to check liver enzymes for fatty liver. N-Acetyl Cysteine (NAC) for liver reduces lead and mercury. The liver is the most regenerative organ we have.

When trying to lose weight and you hit the plateau you must detox the chemicals that were stored in your fat and are being released with no where to go in order to get past the plateau and end the yo-yo dieting.

We did not evolve with chemicals our bodies have no idea what to do with the 70,000 chemicals we are now exposed to so it stores them in your fat.
Detox your house, use natural soaps, cleansers, personal care items, cosmetics and take your shoes off at the door to not track in chemicals. The average woman eats 10 pounds of lead just from lipstick over her lifetime. Chemicals are also stored in bones and when you use up calcium chemicals are also released into the bloodstream.

Managing stress also a must for helping with hormones.

Liver Detox 

DNA test can show enzyme function for how fast or slow you metabolize food, nutrients, drugs and chemicals. This shows how efficient your liver is at eliminating these and can be influenced with supplements and lifestyle.
Cytochrome P450 that can cause over activity of this are caffeine, alcohol, dioxins, saturated fats, pesticides, paint fumes, sufonamides and barbiturates. This test determines effect of prescriptions also.

Detox is now a necessity
Take you B vitamins, NAC and fiber. Need to keep the bowel moving to help get toxins out so they don’t keep re-absorbing. 35-45 grams of fiber a day ancestors average was 100 grams or better. Increase fiber slowly when coming off a standard American diet so your body can adjust.

Healing – do things in the right order
1 – attitude
2 – garden get down and dirty
3 – optimize terrain
4 – sunshine, fresh air
5 – fermented foods

Clean up your environment before detox, clean up food, mindset, control stress, balance hormones, control inflammation and then detox. Add exercise like Tai Chi, Yoga or Palates, repair gut and correct deficiencies.

Important to do detox in right order and slowly especially for those who are very sick/toxic.

Not all probiotics are equal different people and conditions need different stains.

Test your water, clean your air, remove air fresheners, add indoor plants and remove household toxins.
